This immersive, hands-on experience focuses on hydration control, fermentation awareness, autolyse technique, flour behavior, shaping refinement, and scoring precision. Through guided instruction, you will explore both short and extended fermentation methods, including a side-by-side comparison to deepen your understanding of gluten development, structure, and flavor complexity.
Participants engage in a guided starter lab using different flours, work with high-hydration dough, and shape and score their own artisan sourdough loaf to take home. You will leave with both practical confidence and a refined understanding of naturally leavened bread.
